Fresh Meat Development Programme
At Birtwistles Catering Butchers, we have identified the need to help and support the industry, that is indeed our bloodline. We have developed a bespoke range of fresh meat appreciation courses that can be tailored to your chef's specific development requirements. The objective of these training programmes is to help identify the different cuts of meat and from which part of the carcase they are cut from; along with gaining an understanding of some of the commercial aspects of different cuts and their various uses. Most imporant is to have fun on the day whilst gaining an in-depth knowlege into fresh meat and it's preparation.
We offer the Steak Experience, which identifies the number of different trim levels associated with steak cuts and a breakdown of all the prime muscles associated with steak cuts.
To support the Steak Experience we offer the Lamb and Pork Experience, a skilled demonstration of whole lamb and pork carcase cutting into a varied range of different specifications.
Our trainers Kevin Bleasdale and Glenn Eastwood have over 60 years of experience between them in the catering butchers trade and are only too willing to pass some of that priceless knowledge back to the industry and you the chef.
